Job Overview

Oversees and supervises the Forte kitchen operation in the restaurant, in charge of generating and creating any menus, dishes, promotions and special events, general quality control and any activities related to the restaurant. 
監督廚房運營,負責製作菜餚、宣傳等等活動、亦需負責質量控制以及與餐廳相關的活動。

Responsibilities

 

  • Sets up and organize the purchasing specifications with the Procurement Department. Assists in sourcing new products and the selection of the best products for the best values;
    與採購部一同策劃及組織採購。並協助採購新產品以選擇最合適產品;
     
  • Coordinates and organizes the various testing for new and existing products in order to keep and increase the quality standards wherever possible;
    協調和組織新產品以及試驗對現有的產品,以盡可能保持和提高質量標準;
     
  • Controls the proper turnover of the food in the storeroom on all products and especially perishables. Coaches and assists the Storeroom keeper to achieve the best possible condition in keeping adequate storage of the food, by helping to determine par stock according to business level;
    控制儲藏室中所有產品,尤其是易腐爛食品的庫存。 根據業務狀況調整庫存標準,指導和協助儲藏室管理員盡可能保持充足的食物儲存條件;
     
  • Keeps abreast with the assistance of the Procurement of the various market trends, local, international, past, present and future in order to remain on the competitive edge and to develop menus and dishes on demand in the market. 
    協助採購部緊跟本地、國際、過去、現在和未來的各種市場趨勢,以保持競爭優勢並根據市場需求開發不同的菜單和菜餚。
     
  • Develops proper recipes and costs for all menus before pricing, to ensure optimum control on portion size and quality. Proposing and deciding the adequate pricing of each food item in accordance with right cost standard, market trend when appropriate.
    在定價之前為所有菜單制定適當的食譜和成本,以平衡份量和質量。 在適當的時候,根據正確的成本標準和市場趨勢提出和決定食品的定價。
     
  • Analyzes the guest comments and reactions to the product in general in cooperation with the Assistant/F&B Manager and the restaurant managers, in order to keep up with the changing demand of the market;

  • Develops in cooperation of the Assistant/F&B Manager all new menu carte recipes and dishes, new concepts, special activities, and food promotions and any other events pertaining to the F&B operation;
    與餐飲經理合作開發新的菜單點菜食譜和菜餚、新概念、活動、宣傳以及與餐飲運營有關的任何其他活動;
     
  • Supervises the operation in restaurant and banqueting area, to ensure smooth running, and adequate standard of quality
    監督餐廳及宴會區的運作,確保運作順暢,品質達標。

Requirements

 

  1. 8-10 years relevant experience.
    8-10年相關經驗。
     
  2. Strong marketing mind, sociable and outgoing personality creative, flexible in all aspects. 
    擁有市場營銷觸角,善於交際,性格外向,富有創造力,靈活變通。
     
  3. Well organized and a good planner.
    有條理,擅於計劃。
     
  4. Good interpersonal skills and leadership skill.
    良好的人際交往和領導能力。
     
  5. Good team player and able to develop sound working relationships with colleagues.
    良好的團隊合作精神,能夠與同事建立良好的工作關係。
     
  6. Good command of spoken and written English and Mandarin.
    良好的英語和普通話溝通和書寫能力。
