Job Overview

Under the general guidance and supervision of the Operations Manager, and within the limits of established standards and procedures, the incumbent assists in overseeing and directing all aspects of the food and beverage outlets to ensure that service and product standards are maintained.


  1. Supervise the day-to-day operation of the restaurant.
  2. Assist Operations Manager in controlling and analyzing, on an ongoing basis, to ensure optimum performance of the followings:
    • Quality levels of product and service
    • Guest satisfaction
    • Merchandising and marketing
    • Operation costs
    • Hygiene management
    • Human resources management
    • Training and development
  3. Establish and maintain effective employee relations.
  4. Conduct, under the guidance of Operations Manager, such functions as hiring specific levels of employees, employee orientation, performance evaluation, coaching and disciplinary measures if necessary, to ensure appropriate staffing and productivity.
  5. Develop formal training plans and conducts on-the-job training sessions for food and beverage outlet employees.
  6. Attend and contributes to bi-weekly food and beverage department meetings.
  7. Conduct pre-meal briefings and maintains liaison with the Executive Chef and Operations Manager.
  8. Oversee the preparation, presentation and service of food and beverage products to ensure highest quality at all times.
  9. Assist Operations Manager in all administration work.
  10. Ensure hotel grooming and appearance standards are maintained.
  11. Participate in the preparation of the Food & Beverage Department budget and goals.
  12. Assume the responsibilities of Operations Manager in his absence.
  13. Responsible for the overall management of catering events.
  14. Achieve sales target through increasing and developing sales.
  15. Coordinate with vendors and operation team to meet guest requirements.
  16. Responsible for guest database and relationship management.
  17. Responsible for the cleaning and maintenance of the kitchen.
  18. Report all faulty or damaged equipment needs to the Operations Manager.
  19. Address the safety and health problems report to the Operations Manager.
  20. Check the chemicals and supplies to the established par levels to serve the day.
  21. Make sure all chinaware, glassware and silverware is stored properly in the right location.
  22. Stock taking and replenishment when necessary.
  23. Any other relevant projects and duties as assigned by superior.

  2. Service-oriented and good team player.
  3. Energetic, passionate, presentable and with good communication skill.
  4. Strong leadering & management skills.
  5. Fluent in both spoken/written English and Chinese
